Exhibition Background:
Prefabricated dishes are finished or semi-finished products made from agricultural, livestock, poultry, and aquatic products as raw materials, mixed with various auxiliary materials, produced using modern standards, and processed through cutting, mixing, pickling, shaping, seasoning, and other processes. Pre made dishes mainly include four types: ready to eat, instant hot, instant cooked, and instant ready to serve. A central kitchen is an independent processing area and facility that can concentrate on the processing and production of finished or semi-finished food products, and directly deliver pre made dishes to operators or consumers in the catering industry. Compared to traditional kitchen and kitchen processing, central kitchens (pre made dishes) have many advantages such as ensuring food hygiene and safety, reducing raw material consumption, improving production efficiency, saving kitchen space, and uniformly processing by-products.

During the "Tenth Five Year Plan" period, under the leadership of the Ministry of Science and Technology, the "industrialization of main food" project was promoted. Under the promotion of this project, a series of technical problems such as the freezing, preservation, and transportation of traditional staple foods were overcome, making the staple foods such as dumplings, rice dumpling, and dumplings that once needed to be handmade begin to shift to industrial, large-scale, and industrialized production. The central kitchen (pre made dishes) is the infiltration of agricultural science and food science into catering, and is the only way for the traditional cooking industry to move towards scientific, industrialized, standardized, and nutritious health. The development of modern industrial clusters requires the support of "modern technology clusters", and the development of prefabricated vegetable industries requires interdisciplinary integration to drive high-quality industrial development through innovation.
